Many of us enjoy a good Italian meal but a traditional eggplant parmesan recipe take over an hour to prepare and can easily contain 1200 calories! This version takes 1/3 of the time and has 1/6 of the calories.

Ingredients
Serves 4
2 tsp Olive Oil
1 Small onion
1 Large Eggplant
1 cup Sliced Mushroom
1 jar Marinara Sauce
1 tsp Italian Spice Blend
1/4 cup Mozarella Cheese
1/4 cup Chopped Fresh Basil
1 sprinkle Parmesan Cheese
Directions
- Heat olive oil in a large skillet.
- Add onions and saute for 1 minute
- Add eggplant, mushrooms, marinara sauce, and Italian spices. Cover and cook, stirring occasionally, until eggplant is very soft. Cooking time varies depending how thinly you sliced the eggplant, but approximately 15-20 minutes
- Add cheese and basil. Stir and serve!
